Discoveries: Alternative Milk Options

Favorite "Milk" Machine: Soybella
Great for making nut and bean milks, creamy soups, and rice paste.  Easy to operate and easy to clean.

For nut milks, a total of 1 C nuts need to be soaked in water for a minimum of 8 hours before ran through the machine.  There will be some separation.  A gentle shake resolves this.  Some will add 1 TBS sunflower oil to the milk to prevent this.  Other add ons can be salt, flavoring, and a sweetner. From time to time, I want a sweet milk to go on plain Chex served with bananas and berries.  So I just add a spoon of sugar and a dash of vanilla.  But honestly, the bananas and berries are sweet enough without it.

Pulp is great in smoothies, add in for baked items like pancakes or muffins or for the compost. 

Macadamia Almond Milk
Soak 1/2 C macadamia nuts and 1/2 C blanched almonds for 8-12 hrs in soy milk screen placed in utility cup.  Fill the base unit to halfway between the indented lines, about 6 cups of water.  Secure soy milk screen with nuts in it to the head unit.  Run "mill" function 4-5 times.

When finished, unplug machine then remove head unit and put in utility cup to drain.  Store milk in glass container.  Best if used within 5-7 days.  

Tastes nice in rice based cereals, like Chex with banana slices and berries. 

Mix the milk with 1/2 tsp vanilla and sweeten to taste to add to coffee or chai.

Cashew Macadamia nut milk.  Follow the above directions but with 1/2 C each of cashews and macadamia nuts.  Makes a slightly sweet milk
