Whether I am feeling a bit munchy or want a crunchy but flavorful meal, this one is definitely a quick and easy dish to make.
Cover the bottom of a salad plate with corn chips.
Sprinkle on soy protein crumbles. My favorite for this is made by Litelife.
I like these two:
Microwave for 1 1/2 minute or until the "cheese" is soft and melty. OR put ingredients on a oven friendly pan and heat under the broiler.
Cut up 1 green onion and sprinkle on the nachos. Add favorite salsa. Cover with baby lettuce greens and half a diced avocado
