Spicy Ginger Carrot Cauliflower Soup (GF, dairy free, vegan)

In a quart and a half pot add
4 C of either vegetable broth or water plus 2 boullion cubes
20 baby carrots
4 large cauliflower florets broken up
3 green onions cut up
1/2 tsp minced garlic
1/2 tsp cumin
1/2 tsp ginger powder
1/4 tsp ground coriander seeds
1/4 tsp cayenne pepper

Boil until vegetables are soft.
Run through a food processor or use an immersion blender to make the soup smooth.
Serve with a dollop of sour cream or creme fraiche or alternatives. Cilantro is a nice addition to this.
