Asparagus Soup (GF, dairy free, vegan)

Saute 2 diced shallots and 3 minced garlic cloves in 1 TBS favorite cooking oil in at least an gallon pot. I use avocado oil for this recipe.
Wash, remove woody ends, and chop a bunch of asparagus.
Add to the pot.
Add 
4 C of favorite broth 
A couple dashes of cumin
Toss in a bay leaf.
Bring to boil and simmer 30 min. 
Remove bay leaf.
Pour in a blender.
Add 1 C of vegan parmesan
2 C fresh cashew milk
Blend on low speed until smooth.
Return soup to pot and reheat.
Soup's served!
