This recipe makes me think of my Grandma Ginny. Wish she were her to share these tasty morsels with. She'd love them. Here's to you grandma!
Ingredients:
2/3 C Carob chips
5 TBS Coconut oil
Heaping 1/2 C Raw sugar
2 Eggs
1 tsp Vanilla extract
2/3 C Blanched almond flour
2 TBS Carob powder
1/2 tsp Baking powder
1/4 tsp Salt
Carob chips
Chopped pecans
Preheat oven to 350. Line an 8x8 pan with parchment paper.
In a quart size pan, melt 2/3 C Carob Chips and 5 TBS Coconut oil. Remove from heat when it is mostly melted but not all the way. Stir and let cool for 5 min. Mix in heaping 1/2 C Raw Sugar. Then add in 2 eggs. The mixture should become thick and gooey. Add 1 tsp Vanilla extract.
In a bowl mix together, 2/3 C Blanched almond flour, 2 TBS Carob powder, 1/2 tsp Baking powder, 1/4 tsp Table salt. Add to liquid mixture.
Mix in Carob chips and Chopped pecans to taste.
Pour into pan and spread evenly. Bake 20-25 min or until just barely done. Toothpick should come out mostly clean. Let cool. Enjoy!
