Almond Pancakes (GF, dairy free)

Heat a cast iron skillet or pancake griddle.

Mix together
1 cup blanched almond flour
1 teaspoon baking powder
¼ teaspoon salt
¼ cup milk alternative
2 large eggs
1 tablespoon sugar, honey, or maple syrup
1 teaspoon vanilla

Oil the pan or griddle with sunflower or grapeseed oil. It is hot enough whe a drop of water dances on the oil. If it pops, the pan is too hot.

Pour 1/4 of the batter for each pancake.  Cook until bubbles form and most pop.  Flip and finish cooking until it is not longer raw inside.  Will feel springy to the touch.

I like mine served with peanut butter, sliced bananas and maple syrup on top.
