Banana Almond Pancakes (GF, dairy free)

Banana Almond Pancakes

Makes 4 pancakes
Pour 1-2 TBS oil in a cast iron skillet.  It's ok if it looks a little too oily as the pancakes will absorb the oil and the oil will make a nice crispy crust that will hold the pancakes together.  Heat on medium low.  You don't want the skillet or griddle to be too hot or the pancakes will turn out gooey.
Mash one banana in a bowl
Mix in 1 egg (egg substitutes do not work on this recipe)
Add 1/4 tsp vanilla.
Mix well.
Add 1 C almond flour
1 pinch salt
1 pinch baking powder
Mix well.

Remove 1/4 of the dough with a spoon and put on the hot pan.  Smooth it to the shape you want.
Slowly heat until the bottom is browned and flip.  Brown the other side.
LOL.  This one is making faces at us.

Remove from pan.  I love these with peanut butter, maple syrup, and strawberries. They will not be soft and fluffy, rather they are more hearty in texture.
