Pesto Pizza (GF, dairy free, vegan)

Sometimes having had to radically alter a diet is challenging.  The nice thing is quite often there are alternatives to food items we miss.  In my case, intolerances to grains, dairy, and tomatoes makes it hard to enjoy a slice of pizza.  Here's an alternative that I found that satisfies the craving.

Pesto Pizza

Heat the broiler in the oven.

1 gluten free baguette cut in half lengthwise
2 TBS pesto (I made mine with basil, olive oil, pine nuts, salt, and garlic.  I hope to make a recipe when I make another batch.)
2 slices of Chao cheese cut in half.

Spread 1 TBS pesto on a half of the baguette and cover with 2 halves of Chao slices
Broil until the cheese starts to bubble and the edges of ths bread start to brown.
Pairs nicely with a green salad.
