Mashed Cauliflower (GF, dairy free, vegan)

Cauliflower Mash
Ingredients
1/2 head cauliflower
2 green onions
1 tsp diced garlic
1 TBS Better than bouillon
1 5.4 fl oz can coconut cream
Cut up 1/2 a head of cauliflower.  Put in a pot.  Add water to cover cauliflower half way.
I use scissors to cut 2 green onions over the cauliflower.
Add 1 tsp diced garlic
1 TBS Better than bouillon
Bring to a boil.
Cook until the liquid is almost gone.  Add 1 5.4 fl oz can coconut cream
Mix well and cook liquid down 
When there is little liquid left, pour ingredients into a blender or food processor.  You can also use an immersion blender.
Give it a whirl
And you will have a thick paste.
At this point I like to add vegan cheese, butter, sour cream, and top with cilantro or chives.
