Basic Egg Salad (GF, dairy free)

I grew up with egg salad.  Here is a simple recipe for 1 person.  It is easy to adjust for as many people as you need to make it for and according to taste. I like mine to not be drowning in condiments, nor be too dry.

Peel and diced 2 hard boiled eggs and put them in a bowl.  Add about 2 TBS mayonnaise, about 2 tsp Dill pickle relish, and a squirt of dijon mustard. I like to sprinkle on paprika.  

When I am able to eat more solid foods (I had a tooth removed), I add diced celery and onion...sometimes carrot shreds and fresh dill. My favorite cheeses to add were havarti or gouda. Pairs nicely with avocado or served on bread as a sandwich.
