Woke up to a snowy morning and thought, it's a good day for some fritters. They turned out fabulously. I cook by a pinch and dash of this and that but tried to make mental notes of approximate measures. Just know, this is not an exact recipe but pretty close.
Heat a cast iron skillet with sunflower oil to generously cover the bottom.
Mix together about
1 C all purpose flour
1 TBS baking powder
1/3 C white sugar
1/2 tsp salt
1/2 tsp cinnamon
Add
1/2 tsp vanilla paste
1 egg
1/3-1/2 C Cashew milk (or milk of choice)
1/4 C sunflower oil
Mix with dry ingredients
Shred one apple. Mix
Pour 1/4 of the batter into the hot skillet at a time to make 4 fritters. Cook until brown on the outside and cooked on the inside.
Remove to a paper towel covered plate. Sprinkle powdered sugar on top.
Enjoy. We love ours with pomegranate seeds and a cup of coffee or chai.
