Whole Grain Wheat Bread

When you are headed out of town and are on bread duty, Challah, whole grain bread, and sausage rolls are the outcome.

For those asking for recipes, I make this off the top of my head. It is not exact by any means, nor needs to be.
About 2 cups of whole wheat grains. Grind. Heat oven just enough to be comfortably warm but not hot.

Add 4 c hot water to a large glass mixing bowl. Add about 1/3-1/2 cup millet, about 1/4 cup flax meal, about 3-4 TBS golden flaxseed. About 1/2 cup brown sugar. Mix in ground wheat. Test temperature. If it is about the temperature you would bathe a baby in, it is right. Add about 2 TBS yeast.

Stick in oven. Wait until the mixture is foamy.

Add about 2 TBS kosher salt, about 1 c olive oil, and start mixing in enough all purpose flour until you can knead it without the dough being too sticky. Sprinkle flour on while kneading. Knead until rubbery...about 10-15 min.
Wipe oil on outside and place in warm oven until double in size. Beat down. Take challah. Then break off the needed dough amounts to make what you want.

After you form what you are wanting, make a egg yolk and oil wash to brush on top. Let rise. Bake at 350 until browned on top and sounds hollow when tapped.
